Personality[]
Yamagoshi is earnest, nurturing, humble and polite, but is deeply passionate about his craft. A chef by trade, he values customer satisfaction over all else, and is deeply proud of the specific recipe he's made, and views the preservation of its quality as a promise to his customers. He places a lot of focus in training new chefs and passing on his recipe. His relationships apprentices are all shown to be very strong, indicating that he is able to foster a lot of loyalty and passion in the people he works with.
Generous at heart, he once fed a young Shun free of charge when the boy missed dinner one night. He is very protective of his proteges, especially Shun, who he treats almost like a son.

Persona 5: The Phantom X[]
Yamagoshi is a veteran ramen chef and the owner of Heritage Kitchen. He is the one who taught Masa and Shun Kano how to make ramen and the pride as a ramen chef, hence both respect him greatly, especially Shun. He also mastered many traditional Chinese dishes such as fried rice and dumplings, as seen from Heritage Kitchen's menu. Long before the events of the game, his wife passed away. He cites his famous ramen recipe as the only dish he made that his wife truly loved. At some point, he opened Victory Kitchen as a branch of Heritage Kitchen specifically to train new chefs.
When Shun was a child, he wandered into Yamagoshi's shop, captivated by the smell. Yamagoshi generously fed the younger Shun, which inspired a life-long loyalty in the boy. Shun would eventually want to train under Yamagoshi, but he told the boy to wait until he was in high school. Eventually Shun did just that, and trained under Yamagoshi and Masa as a part-timer. Shun would eventually became very proficient in recreating Yamagoshi's dishes, though Shun insists he can do better, particularly in finely shaving the katsuobushi when making the dashi broth.
Some time before Mission 2, Victory Kitchen was visited by food critic Hiromu Miyazawa, who heavily criticized the signature dish. Offended, Shun lost his temper and splashed Miyazawa in the face. Miyazawa would retaliate by posting a deeply scathing review, which damaged Victory Kitchen's reputation and profit margins. Miyazawa would offer to retract the review, but only if he was handed over control of the restaurant, if they paid him a handsome bribe, and if Shun is fired. Having no choice and wanting to prevent more trouble, Shun stops working at Victory Kitchen, though neither Yamagoshi or Masa blame him for the incident.
"Mission 2: Outcome of Pride"[]
Yamagoshi has been targeted by Miyazawa's extortion scheme for some time. When Miyazawa tries to coerce Yamagoshi into transferring the ownership of Heritage Kitchen to him, Yamagoshi furiously refuses but collapses due the combination of the stress and his illness. Miyazawa takes advantage of the situation and uses Miyazawa's stamp to authorize the transfer agreement.
Later, when Shun goes to face Miyazawa, the protagonist and Motoha seek help from Yamagoshi, as Shun is fated to fail (due to Miyazawa throwing away "the heart of Victory Kitchen.") In response, the hospitalized Yamagoshi asks them to give Shun the prized mandolin/katsuobushi shaver box that he has been keeping in Victory Kitchen's safe, as he had planned to give it to the boy once he reached adulthood. As the tool is vital in the creation of Yamagoshi's signature broth, it proves vital in allowing Shun to perfectly recreate the ramen dish.
After Miyazawa has had his heart changed and confessed his wrongdoings in public, Yamagoshi recovers and regains the ownership of Heritage Kitchen from Miyazawa.
"Mission 3: Concerto for Rulebreakers"[]
After fully recovering, Yamagoshi reopens Heritage Kitchen. In a morning, the protagonist runs into him on his way to school. Yamagoshi invites him to help him out at the restaurant, which unlocks the city activity "Part-time at Heritage Kitchen" that allows the protagonist to work part-time there at night, with Shun occasionally helping out there.
A few days later, Yamagoshi invites the protagonist, Motoha, and Shun to dine at Heritage Kitchen celebrate their victory against Miyazawa. He and Masa tell the group about Masa's past with Kumi Katayama, which helps them understand why Katayama's Palace appears in the form of a dam. The group also learn from Yamagoshi and Masa that Katayama was not previously acquainted with Kei Akashi.

- Yamagoshi's personal stamp suggests that his full name is Kazunori Yamagoshi (山越和徳, Yamagoshi Kazunori), as shown when Miyazawa uses it on the transfer agreement.
