That depends. If you're looking to play specifically SMT, either III or IV is probably the best place to start. They have the most refined and intuitive battle systems as a result of coming after a lot of trial and error. If you mean SMT as a franchise, probably a Persona game that isn't 3 because those are the most new-player friendly.
I'd say go with SMT 1. Persona stopped being an SMT game with 3 so I'd stay away from those.
Personally, I don't think SMT I is a great place to start. It's far from polished, and has a whole ton of problems that were fixed by III and IV. And it's not like there's any story importance unless you're playing II.
Or, I guess, Messiahs in the Diamond Realm.
My start with the franchise as a whole was SMT1, and personally, I never regretted that. It was a lot of trial and error, it could feel clumsy at times, but if viewed reasonably as a product of its time, it can be a lot of fascinating fun on its own. It's given me an appreciation (and perhaps, bias) towards 90s Atlus games a whole, admittedly.
SMT3, and 4 make for somewhat refined experiences in terms of gameplay, though they can still unprepared players' butts, one should note.
(in further terms of 90s Atlus gameplay, I think Soul Hackers refined it to a, uh, well, fine point.)

And fair enough. I personally think that it's easier to appreciate something as a product of its time if you've already seen what it became. I played SMT I after SMT III and IV, and I definitely appreciated the game a lot more than I would've if I played it first. However, that's just me.
I assume you started with persona 5. So I am 100% sure you would enjoy SMT IV. It's kind of easy, and a lot of quality of improvements in terms of gameplay.

Honestly gonna go left field from everyone else and say Devil Survivor 2. It was my first SMT game and I've been here since 2012, so it must have worked. It has a lot of similarities to Persona while still keeping in with its SMT elements.
Well i would say play persona 3 4 and 5 because those games mechanics makes a littlw morw sense
